En una\u00a0cacerolita,\u00a0cocina la salsa con sal y pimienta al gusto, por 10 minutos a fuego bajo.\u00a0\u00a0<br><br>Coloca los\u00a0<em>bits\u00a0<\/em>de coliflor en un\u00a0bowl\u00a0amplio, a\u00f1ade el cilantro, el queso parmesano, el ajo en polvo, el huevo;\u00a0sazona\u00a0con sal y pimienta, y mezcla con las manos hasta obtener una masa manejable.\u00a0<br><br>Engrasa un sart\u00e9n (o comal) con aceite en aerosol a fuego bajo. Coloca un poco de masa y exti\u00e9ndela con ayuda de una cuchara hasta formar un c\u00edrculo mediano; cocina durante cinco minutos\u00a0por ambos lados\u00a0a fuego bajo (es necesario que se cocine a fuego bajo, sino se perder\u00e1 la flexibilidad).<br><br>Arma las enchiladas, rellena las tortillas con el pollo desmenuzado y dobla por la mitad.
