{"id":24139,"date":"2026-04-23T13:59:43","date_gmt":"2026-04-23T19:59:43","guid":{"rendered":"https:\/\/wp.uaslp.mx\/noticias\/?p=24139"},"modified":"2026-04-23T14:17:21","modified_gmt":"2026-04-23T20:17:21","slug":"fcq-acerca-a-estudiantes-al-analisis-sensorial-aplicado-en-la-industria-alimentaria","status":"publish","type":"post","link":"https:\/\/wp.uaslp.mx\/noticias\/investigacion\/fcq-acerca-a-estudiantes-al-analisis-sensorial-aplicado-en-la-industria-alimentaria\/","title":{"rendered":"FCQ acerca a estudiantes al an\u00e1lisis sensorial aplicado en la industria alimentaria"},"content":{"rendered":"\n<p>En el marco del Segundo Foro de Temas Selectos de la Industria Alimentaria, realizado en la <a href=\"https:\/\/cienciasquimicas.uaslp.mx\/#gsc.tab=0\">Facultad de Ciencias Qu\u00edmicas<\/a> (FCQ) de la Universidad Aut\u00f3noma de San Luis Potos\u00ed (UASLP), se llev\u00f3 a cabo la conferencia \u201cSensorial 360: Experiencia de la Ingenier\u00eda del Sabor\u201d, impartida por el maestro H\u00e9ctor Reynoso Ponce, quien introdujo a los asistentes en los principios del an\u00e1lisis sensorial y su aplicaci\u00f3n en el desarrollo de productos.<\/p>\n\n\n\n<p>Durante la sesi\u00f3n, el ponente explic\u00f3 que el objetivo del taller fue involucrar a los participantes en una experiencia integral que les permitiera dise\u00f1ar o mejorar productos a partir de la identificaci\u00f3n de caracter\u00edsticas sensoriales. \u201cLa idea es que ustedes tengan un poquito de igualdad sensorial, identifiquen algunas de las caracter\u00edsticas y puedan aplicarlas en contextos reales\u201d, coment\u00f3, al referirse al enfoque pr\u00e1ctico del ejercicio.<\/p>\n\n\n\n<p>Reynoso Ponce detall\u00f3 que el an\u00e1lisis sensorial es una herramienta que permite medir de manera cualitativa y cuantitativa las propiedades de un producto, particularmente en alimentos, donde factores como sabor, aroma, textura y apariencia influyen directamente en la aceptaci\u00f3n del consumidor. \u201cLa aceptabilidad de un producto al p\u00fablico general es la clave m\u00e1s importante en este trabajo\u201d, se\u00f1al\u00f3.<\/p>\n\n\n\n<p>El especialista tambi\u00e9n abord\u00f3 la complejidad del sabor, al explicar que no se trata de una percepci\u00f3n \u00fanica, sino de la integraci\u00f3n de diversos est\u00edmulos que involucran a todos los sentidos. \u201cEl sabor deriva de la integraci\u00f3n de un est\u00edmulo que provoca una sensaci\u00f3n; es un conjunto de interacciones de tipo org\u00e1nico y el\u00e9ctrico vinculadas a una acci\u00f3n bioqu\u00edmica\u201d, indic\u00f3, al desglosar el proceso que ocurre desde el contacto con el alimento hasta su interpretaci\u00f3n por el cerebro.<\/p>\n\n\n\n<p>Finalmente, destac\u00f3 que sentidos como el gusto, el olfato, el tacto, la vista e incluso el o\u00eddo participan en la experiencia sensorial completa, lo que permite construir perfiles m\u00e1s complejos y atractivos para los consumidores. Con este tipo de actividades, la UASLP refuerza la formaci\u00f3n pr\u00e1ctica de sus estudiantes al acercarlos a herramientas clave en la industria alimentaria.<\/p>\n\n\n\n<p
